Meal Plan 1/9 - 1/13

I meant to post this on Monday but this week has been different than normal. Yesterday, I was able to go out to lunch with my grandparents - my Papa is a truck driver and my Nana rides with him to help out. They take the interstate near Chattanooga - in Ringgold, Ga which is about 20-25 minutes from my house so Hailey and I headed out to meet them. And I love eating at this particular truck stop...yummy! 

Here is our menu for the week: 

Monday: Burritos - ground beef, cheese, salsa, black beans and chips

Tuesday: Spaghetti for Nathan and burrito for me (leftovers)

Wednesday: Funny story: Last night, I made a Roasted Onion Penne with Chicken. It looked and smelled so good...then we took a bite. Nathan said he could not eat it. He was politely declining. haha I did not like it either. sauce was too strong. I thinned mine out with milk but I still had the bad taste in my mouth. We ended up eating: McDonald's - I had coupons for free Large Fries and Big Macs - Nathan had chicken nuggets and we got two small drinks. Way better! 

Thursday: Chicken Quesadillas with Chicken Tortilla Soup - yummy! 

Friday: Date night!

  1. I used the Lasagna Soup I shared with you a while ago as an inspiration and made a very delicious soup, kinda like Olive Garden's pasta e fagioli soup - ground beef, italian sausage, carrots, onions, celery, tomato sauce, pasta, kale, kidney and cannelini beans. It was sooo delicious :)
