Cooking In The Kitchen

Here is what my nana and I made today: 

- Meatloaf 

- Lasagna 

- Chicken and Biscuits

- Mashed Potatoes 


My papa and nana will be on the road a lot this week so I thought it would be a good idea to make meals that we could split with them. I have never made lasagna or meatloaf before but with my nana's guidance - it turned out great!

    My husband loves them both and I'm trying to learn as many Southern recipes as possible.

    1. Meatloaf - 1 lb ground beef, 2 eggs, 1/4 cup Italian bread crumbs, 1/2 red onion chopped, celery (we used the leaves from the inside stalks), salt/pepper, garlic garlic (tastefully simple) and 4 tbsp. prego sauce (you can use tomato sauce or ketchup but I didn't have those)

      Mix together, form in loaf - bake 350 for 45 min.

      Chicken and Biscuits:

      the biscuits were pillsbury. :D

      boil 2 chicken breasts (we used bone in) until cooked. then pull off and dice it up.

      for the gravy, we used two packets of chicken gravy - mix chicken with it after it is all cooked

      Pour chicken gravy mixture over the biscuits and serve with mashed potatoes and green beans (or whatever else you may have)

      Very easy. Not southern - we are northern. lol They are good. Hope this helps you!
